Judean Vineyards Serie

The Judean Vineyards Series represents the heart of Hevron Heights — wines born from the rugged slopes and high altitudes of the Judean Hills. Sourced from a mosaic of carefully selected vineyards between 650 and over 1000 meters above sea level, these wines capture the remarkable diversity of our mountain terroir, where warm Mediterranean sunlight meets the cool evening breezes descending from the hills. At the center of the series stands Isaac’s Ram, the winery’s most beloved and widely enjoyed wine, known for its depth, balance, and unmistakable character. Alongside it, Jerusalem Heights reveals the elegance of a classic Cabernet–Merlot blend, while Pardess expresses the rich and velvety nature of Merlot grown in our highest vineyards. Together, these wines embody the signature style of Hevron Heights — generous fruit, refined structure, and a sense of place rooted deeply in the ancient vineyards of Judea.

Hevron Heights Reserves

The Hevron Heights Reserves series represents the very best of our estate — a collection of exceptional wines crafted from our finest vineyard selections across the Judean Hills. WHY DIFFERENT RESERVE EDITIONS ? The Terroir of the Judean hills and mountains is so specific, with a very special microclimate, that we decided to identify each one specifically in our high-end production. These wines originate from carefully selected vineyard blocks at high elevations throughout the region. Warm Mediterranean sunshine and cool mountain breezes create ideal conditions for slow, balanced ripening. Each lot is hand-harvested and vinified separately before undergoing extended aging in fine oak barrels. Through careful blending and patient maturation, these wines develop remarkable depth, structure and elegance, expressing the distinctive character of the Judean Hills and the craftsmanship of our winery.

Organic Vineyards

Redemption is born from one of the most distinctive organic vineyards in the Judean Hills, overlooking the Dead Sea from an altitude of 930 meters. Cultivated with natural methods and great care, the vineyard produces grapes of remarkable purity and character. A blend of Cabernet Sauvignon and Merlot aged for twenty-four months in French oak, Redemption expresses the intensity of its mountain terroir with depth, spice, and elegant structure. Rich yet balanced, it reflects both the strength of the land and the commitment of Hevron Heights to crafting wines of authenticity and precision. This vibrant wine is, of course, certified by the Israeli Association for Organic Agriculture.

Limited Editions

From time to time, Hevron Heights releases exceptionally small productions that reflect singular moments in the life of the winery. These limited editions are crafted from select vineyard lots and aged patiently in our cellars in the Judean Hills, often in extremely small quantities. Some wines, such Jacob’s Ladder, were produced from carefully chosen barrels and unique vineyard expressions that could never be reproduced again.

Rosé

Messody Rosé is a refined, high-end rosé crafted exclusively from Cabernet Sauvignon grapes grown in the Judean Hills. Produced using the traditional saignée (“bleeding”) method, the juice is gently drawn from the fermentation tank shortly after the grapes arrive at the winery, allowing only minimal contact with the skins. This delicate technique creates the wine’s elegant color while preserving its freshness and vibrant fruit character. The result is a bright and expressive Rosé with lively aromas of fresh citrus fruits and delicate floral notes. On the palate, Messody Rosé is crisp, refreshing and beautifully balanced, offering vibrant fruit flavors with a subtle hint of sweetness. Light, elegant and remarkably refreshing, Messody Rosé is the perfect wine for warm days, relaxed gatherings and Mediterranean cuisine

Desert Wines

Our dessert wines express the richer and more indulgent side of the Judean Hills. Crafted from carefully selected grapes and shaped by the unique climate of the mountains surrounding Jerusalem, these wines reveal remarkable concentration, aromatic complexity, and natural sweetness. From the rare ice-style wine Eden Quintessence, produced from frozen grapes that yield an intensely concentrated nectar, to the fragrant sweetness of Jacob Muscat, each wine offers a distinctive expression of the estate’s craftsmanship. Lush yet balanced, these wines are created for moments of pleasure — perfect alongside fine desserts, aged cheeses, or simply enjoyed on their own as a refined conclusion to a memorable meal.
