At 980 meters above sea level, in the high reaches of the Judean Hills, our vineyards draw their character from altitude, stone, and history. Hevron’s limestone slopes, shaped by millennia of sun and wind, provide natural drainage and mineral depth — conditions long recognized for their viticultural promise.
The mountain climate defines the rhythm of the vine. Warm, luminous days are tempered by cool nights that descend from the hills. A maritime breeze rises gently from the Mediterranean coast, while dry air currents from the Negev Desert reduce humidity and disease pressure. This natural equilibrium slows maturation, preserving aromatic precision while allowing full phenolic ripeness.
Viticulture in Hevron is not recent. The region is cited in Biblical accounts as a land of exceptional grape clusters. Through centuries, despite interruptions and revivals, the vine has remained rooted in this soil. We consider ourselves custodians of that continuity.
Density and Discipline
Our vineyards are cultivated using a rigorous model inspired by French viticulture. Planted at an exceptionally high density — more than 7,000 vines per hectare — each vine is encouraged to compete, driving its roots deep into the calcareous subsoil.
This density naturally limits vigor and yield, concentrating the fruit’s essence. The vine is never allowed excess. Balance is pursued through meticulous pruning, canopy management, and careful monitoring throughout the growing season. Every decision in the vineyard serves a single purpose: to reveal the character of the land with clarity and restraint.
Precision in the Field
Work in the vineyard is deliberate and manual where it matters most. Harvesting is done by hand, parcel by parcel, at the precise moment when structure, acidity, and maturity converge.
Yields are deliberately moderated. Only fruit that meets our standards continues on to the cellar. In certain vintages, parcels are excluded entirely if they do not show the concentration and harmony we require.
The vineyard is observed daily. The health of the soil, the balance of the canopy, and the evolution of each cluster — nothing is left to chance. Agriculture here is not industrial; it is attentive.
Varieties of Expression
Cabernet Sauvignon and Merlot find a natural affinity in these mountains. The altitude preserves freshness and aromatic definition, while the limestone soils provide structure and length. Cabernet Franc and Petit Verdot add depth and nuance, and white varieties such as Chardonnay and Sauvignon Blanc reflect the brightness of the highland climate.
Each cépage is planted where it performs best, aligned with slope, exposure, and soil composition. The vineyard is divided not merely by variety but by micro-expression.
A Landscape of Continuity
Approaching Hevron, one encounters a sea of vines spreading across the hillsides. In some places, they grow almost untended, as if recalling an ancient memory. Olive groves share the landscape, reinforcing a sense of permanence.
Our role is to understand the land, cultivate it with discipline, and allow each parcel to speak with clarity and restraint.
